The limitation of a single instance of Skype is due to a Skype restriction in this case, but according to the book Skype Hacks by Andrew Sheppard it is possible to run multiple instances of Skype under the same user session in Mac OS X (and in Windows and Linux as well), as reported in page 102 and 123 of the book.
